  • Cranberry Salsa, Brantley Beach's

    Ingredients

    • 2 c. dry cranberries such as ocean spray "cranberry raisins"
    • 16 ounce cranberry sauce, whole berry
    • 16 ounce jellied cranberry sauce
    • 4 x roma tomatoes seeded and diced
    • 1 x bell pepper chopped
    • 1 x onion chopped
    • 1 stalk celery chopped
    • 1 x jalapeno pepper chopped and seeded optional
    • 1 Tbsp. minced fresh cilantro

    Directions

    1. Blend all ingredients thoroughly and chill for at least a day before serving.

    4. NOTES : It's this salsa which really sets Brantley's Chicken Wings with Cranberry Salsa apart. Chef Brantley Beach is at the Sunset Grille at Edisto Island. The salsa is also good with other chicken dishes, duck and turkey. More than sufficient for 12 wings.
    5. Apparently the restaurant serves all of this plus 12 large deep fried warm wings to 6 people. So the # of servings below is my idea;-)
