Cranberry Melt In Your Mouth Cake
Ingredients
- 2 c. Cranberries, rinsed, picked over, and patted dry
- 1 1/2 c. Sugar, divided
- 1/2 c. Minced nuts
- 2 x Large eggs
- 1 stk Margarine, melted
- 1 stk Butter, melted
- 1 c. All-purpose flour
Directions
- Preheat oven to 325 F.
- Mix the cranberries, 1/2 c. of the sugar, and the nuts and pour into a greased 10-inch pie plate.
- Beat together the Large eggs and remaining 1-c. sugar. Add in the cooled melted margarine and butter and flour, stirring to blend well. Pour the batter over the cranberry mix and bake in a preheated 325 F oven for 50 to 60 min. Serve plain or possibly with vanilla ice cream.
