  • Cranberry Blueberry Bars

    Ingredients

    • Crust/Topping
    • 1 1/2 c. oats
    • 1/2 c. flour
    • 1/2 c. brown sugar, packed
    • 1/4 c. walnuts, minced [optional]
    • 1/4 tsp baking soda
    • 1/2 tsp cinnamon
    • 1/8 tsp salt
    • 6 tsp butter, melted Filling
    • 1 1/2 c. fruit [1/2 each cranberries and blueberries, or possibly whatever you like]
    • 3 tsp sugar
    • 2 tsp cornstarch

    Directions

    1. Place aluminum foil into an 8" square pan, with it hanging over two sides to be able to grip and lift when done. Mix crust ingredients and press firmly onto foil-lined pan, reserving 1/2 c.. Bake in a preheated 350F oven for 12 min.
    2. Stir filling ingredients in a small pan over medium low heat. Simmer 2 min till slightly thick. Pour onto crust and smooth proportionately. Sprinkle reserved topping all over. Return to oven and bake 30 min, checking to be sure which the top does not burn. Cold in pan 10 min. Lift out with the foil edges and place on serving plate. Cut into squares.
