Crab Stuffed Avocado
Ingredients
- 100 gm Lemon, garlic and herb dip (3 1/2oz)
- 250 gm White crab meat, flaked (8oz)
- 3 x Spring onions, finely minced
- 1 Tbsp. Fresh parsley, finely minced Salt and freshly grnd black pepper
- 2 x Ripe avocado pears
- 1 Tbsp. Lemon juice, for brushing
- 1 tsp Paprika
Directions
- Place the dip in a bowl along with the crab meat, spring onions and parsley, mix to combine. Season to taste.
- Halve the avocado pears lengthways and remove the stones. Place each avocado half on a serving plate, brushing the cut surface with a little lemon juice.
- Pile the crab mix into the avocado halves. Garnish with a sprinkling of paprika and serve.
- NOTES : A simple but delicious dish, these crab stuffed avocado pears make an appetising starter or possibly light lunch.
