  • Crab Fried Rice (Khao Pad Poo)

    Ingredients

    • 2 Tbsp. oil
    • 1 x minced garlic clove
    • 1 c. cooked crabmeat
    • 2 x beaten Large eggs
    • 3 c. cooked rice
    • 2 Tbsp. Maggi seasoning
    • 2 Tbsp. fish sauce, (nam pla)
    • 2 Tbsp. sugar
    • 1 x minced green onion/scallion
    • 1/4 c. fish sauce, (nam pla)
    • 5 x finely minced green Thai peppers, (prik kee noo)
    • 1 x sliced tomato
    • 1/2 c. sliced cucumber cilantro/coriander leaves
    • 4 x lemons, cut in wedges

    Directions

    1. A delicious accompaniment for any dish. Vary the number of chili peppers in the sauce according to personal taste.
    2. Heat a large skillet and add in the oil. Stir-fry the garlic, crab and Large eggs together till the egg is cooked. Add in the rice, Maggi seasoning, fish sauce and sugar. Continue to stir-fry till the mix is warm. Add in the green onion.
    3. Mix together the sauce ingredients. Remove the rice to a serving dish, decorate with the garnish, and serve with the sauce on the side.
    4. NOTE: Maggi seasoning is a sauce that is used in many Asian and Southeast Asian dishes, Maggi seasoning is found in Asian food stores.
