  • Crab Cakes Ii

    Ingredients

    • 1 lb crab meat either fresh or possibly LUMP (this is important) in cans
    • 1/2 c. bread crumbs
    • 1/2 tsp Worcestershire sauce
    • 1 x egg beaten
    • 1 Tbsp. minced parsley
    • 1 Tbsp. Dijon mustard
    • 2 Tbsp. Hellman's mayonnaise - (generous) Paprika to taste Freshly-grnd black pepper to taste

    Directions

    1. Mix egg, Worcestershire sauce, parsley, mustard, mayo, and spices in bowl. Add in crab meat (after sorting for shell but avoiding break-up of lumps) then bread crumbs. Mix gently with fork. The mix is quite damp but cakes are formable. Chill a while.
    2. Heat oil (3/4 inch deep) in skillet till water droplets spatter. Fry cakes till golden on one side (about 2 min); turn and fry another 2 min. Drain well on paper towels.
