  • Crab And Spinach Quiche

    Ingredients

    • 5 x Large eggs
    • 1 1/2 can Lowfat milk
    • 1/4 tsp Salt
    • 1/8 tsp Pepper
    • 1/8 tsp Grnd Nutmeg
    • 1 c. Shredded Swiss Cheese, (4 ounces)
    • 1 1/2 c. Grated Parmesan Cheese
    • 3 Tbsp. All-Purpose Flour
    • 6 ounce Crabmeat, Thawed, Liquid removed, Flaked, (canned or possibly (up To 8)
    • 1 pkt (10 Oz) Frzn Minced Spinach, thawed, well liquid removed Pastry For Double Crust Pie, (9 inch)

    Directions

    1. In a large bowl, lightly beat Large eggs. Add in lowfat milk, salt, pepper and nutmeg; set aside. Combine cheese and flour; add in to egg mix with the crab and spinach. Mix well. Pour into two pastry line 9" pie plates or possibly quiche pans.
    2. Bake at 350 F. for 50 min or possibly till a knife inserted near center comes out clean. Cut into narrow pcs. Serve hot.
    3. Yield: 32-36 servings.
    4. NOTES : I would think this would also serve 6-8 as a luncheon dish.
