  • Crab And Corn Soup (Sopang Mais)

    Ingredients

    • 4 c. (1 L) whole fresh, frzn, or possibly canned corn kernels
    • 4 c. (1 L) water or possibly chicken stock
    • 2 c. (500 ml) lowfat milk
    • 1 Tbsp. (30 ml) vegetable oil
    • 2 x -4 cloves garlic, finely minced
    • 1/2 lb (125 ml) crab meat, picked over (optional) Salt and freshly grnd pepper to taste

    Directions

    1. Minced parsley or possibly cilantro (coriander) for garnish
    2. Puree the corn and water in an electric food processor or possibly blender.
    3. Strain through a sieve, pressing to extract as much liquid as possible, and throw away the solids remaining in the sieve. Heat the oil in a large pot over moderate heat and saute/fry the garlic till golden. Add in the corn liquid, lowfat milk, and optional crab meat. Bring to a boil over moderate heat, stirring frequently. Season with salt and pepper and serve garnished with minced parsley or possibly cilantro.
    4. Serves 4to 6.
