    Ingredients

    • 3 Tbsp. Sunflower oil
    • 1 x Onion, sliced
    • 1 x Red pepper, sliced
    • 1 x Sweet potato or possibly 2 carrots, minced
    • 1/2 c. Minced green beans (scant)
    • 14 ounce Can baked beans
    • 7 ounce Can corn
    • 1 Tbsp. Tomato paste
    • 1 tsp Barbecue spice seasoning
    • 4 ounce Cheese, diced (smoked if possible)
    • 1 lb Potatoes, thinly sliced
    • 2 Tbsp. Butter, melted Salt Grnd black pepper

    Directions

    1. Preheat the oven to 375F. HEat the oil in a frying pan and gently fry the onion, pepper and sweet potato or possibly carrots till softened but not browned.
    2. Transfer to a flameproof casserole.
    3. Add in the green beans, baked beens, corn 9and liquid), tomato paste and barbecue spice seasoning. Bring to a boil, then simmer ofr 5 min.
    4. Cover the vegetable and cheese mix wih the sliced potato, brush with water, season with salt and pepper and bake for 30-40 min till golden on top and the potato is cooked.
