Ingredients

  • 1 can black beans, rinsed
  • 1 can black eyed peas, rinsed
  • 1 can white corn, drained
  • 1 rib celery, finely chopped
  • 1/2 red onion, finely chopped
  • 1 red or green pepper, finely chopped
  • 1/8 cup jalapenos, finely chopped
  • Dressing:
  • 1 cup sugar
  • 3/4 cup cider vinegar
  • 2 tsp. water
  • 1/2 cup olive oil
  • 2 garlic cloves, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions

  1. Place first 7 ingredients in a ziploc bag.
  2. In a sauce pan, bring dressing ingredients to a boil.
  3. Cool.
  4. Pour over vegetables and refrigerate for 24 hours.
  5. Stir occasionally.
  6. Drain and serve with Frito Scoops.
