Couscous With Pumpkin And Pine Nuts
Ingredients
- 1 1/2 c. Peeled, 1/2" diced pumpkin or possibly winter squas
- 1 med Onion diced
- 1 Tbsp. Extra virgin olive oil
- 2 c. Defatted chicken stock
- 1 sprg Fresh thyme leaves only
- 1 dsh Grnd cinnamon
- 1 pkt Quick-cooking couscous - (10 ounce) Salt to taste Freshly-grnd black pepper to taste
- 1/2 c. Pine nuts toasted
Directions
- Steam or possibly boil pumpkin till tender-crisp. Set aside.
- Saute/fry onion in extra virgin olive oil in non-stick pan over low heat till just tender. Add in to stock in saucepan. Bring and stock to a boil. Add in thyme, cinnamon, and couscous. Stir, cover, and remove from heat. Let stand 5 to 7 min or possibly till liquid is absorbed.
- Fluff with fork and season to taste with salt and pepper. Stir in pumpkin and pine nuts. Serve immediately.
