  • 1 med Onion
  • 1 Tbsp. Veg broth
  • 3 c. Vegetable broth
  • 2 x Carrots, peeled
  • 2 x Turnips, peeled
  • 1 x Sweet potato
  • 1 x Zucchini
  • 1 x Red pepper Cut all veggies in strips - Julienned
  • 1 can Garbanzo beans, liquid removed
  • 12 ounce Can tomato sauce
  • 1/4 tsp Cinnamon
  • 1/2 tsp Turmeric pn Saffron pn Curry
  • 2 c. Couscous grains


  1. In a large saucepan, saute/fry onion till lightly browned. Add in vegetable broth and bring to a boil. Transfer to a large pot and add in carrots, turnips, and potato. Simmer 15 mins. Lower heat and add in zucchini and pepper. Cook 20 mins. Add in beans, tomato sauce and spices. Cook til heated through.
  2. In a separate pot, bring 2 1/2 c. of water to a boil. Add in couscous, cover and take off of heat. Let stand 5-7 min, fluff with a fork and serve with vegetables on top.
