Courgette, Mushroom And Fresh Tomato Sauce

  • 2 Tbsp. extra virgin olive oil
  • 1/2 c. onion minced
  • 1 c. courgette cut in 1/2" cubes
  • 1 c. mushroom minced
  • 1 x garlic clove crushed
  • 1 c. fresh tomatoes minced
  • 1/2 tsp salt
  • 1/4 c. Italian parsley minced
  • 2 Tbsp. fresh basil minced grated Parmesan cheese


  1. Yield: 2-1/2 c., or possibly sufficient for 1/2 lb pasta
  2. Heat oil in a wide saucepan; add in onion; saute/fry 5 min. Stir in courgette and mushrooms; saute/fry over hight heat, stirring, till tender, about 10 min. Stir in garlic, saute/fry 1 minute. Add in tomatoes, cook, stirring, 5 min. Add in salt, parsley, and basil.
  3. Toss warm pasta with the sauce and serve at once. Serve with Parmesan cheese, if you like.
