  • Country Ham With Brown Sugar Coating

    Ingredients

    • 12 lb UNCOOKED COUNTRY HAM
    • 64 ounce BOTTLE, APPLE JUICE
    • 2 tsp Grnd CLOVES
    • 2/3 c. PACKED BROWN SUGAR
    • 2 1/2 Tbsp. DRY SHERRY *

    Directions

    1. * RED WINE Or possibly CIDER VINEGAR CAN BE USED INSTEAD OF SHERRY.
    2. PLACE HAM IN A LARGE CONTAINER. COVER WITH WATER AND SOAK 24 Hrs. POUR OFF WATER. SCRUB HAM IN Hot WATER, WITH A STIFF BRUSH, THEN RINSE WELL.
    3. PLACE HAM IN A LARGE COOKING PAN AND Add in APPLE JUICE. Add in Sufficient Warm WATER TO COVER HAM. BRING TO A BOIL; COVER AND REDUCE HEAT. SIMMER 2 Hrs Or possibly Till MEAT THERMOMETER READS 142 DEG F. (Don't LET THERMOMETER TOUCH BONE Or possibly FAT. LET HAM Cold IN DRIPPINGS FOR 3 Hrs. COVER AND Chill AT LEAST 8 Hrs. TRIM SKIN FROM HAM AND PLACE FAT SIDE UP ON A RACK IN A SHALLOW BAKING PAN. SPRINKLE FAT WITH Grnd CLOVES. COMBINE BROWN SUGAR AND SHERRY; BRUSH OVER HAM. BAKE AT 425 DEG F. FOR 10 TO 15 Min Or possibly Till COATING IS Golden brown AND CRUSTY ( HAM WILL STILL BE Cold ). SLICE THINLY TO SERVE.
