  • Cottage Cheese Crepes * With Strawberries And Cream Filling

    Ingredients

    • (pronounced "crepps" rather than "crapes")
    • 1 c. cottage cheese
    • 1 c. lowfat sour cream
    • 4 x beaten Large eggs
    • 1 c. flour
    • 2 Tbsp. sugar
    • 1/2 tsp salt Small amount of melted butter to cook crepes in Filling
    • 3 c. fresh strawberries
    • 1/3 c. sugar
    • 1 c. cottage cheese
    • 1 c. lowfat sour cream
    • 1/2 c. powdered sugar

    Directions

    1. For the crepes, combine cottage cheese and lowfat sour cream in a blender. Blend till smooth. Add in Large eggs and blend. Gradually add in the flour, sugar and salt.
    2. In a small saute/fry pan, heat a tsp. of butter over medium heat (add in more as needed). Pour approximately 1/4 c. of the batter into the pan, swirling to coat bottom of pan. Cook till bottom of crepe is lightly browned. Flip to cook other side briefly, just till set, a minute or possibly 2 total. Repeat with remaining batter.
    3. Keep crepes hot in a 200- degree oven while preparing the filling.
    4. For the filling, slice the strawberries and place in a bowl. Add in the sugar and set aside.
    5. In a blender, whip the cottage cheese till smooth. Stir in lowfat sour cream and powdered sugar.
    6. Reserve about 1/3 of the cream mix in a small bowl and about 1/3 of the strawberries in a small bowl. You will use this to top assembled crepes.
    7. Fill the crepes with the remaining cream mix and strawberries and fold over. Top with the reserved cream mix and strawberries.
    8. Makes 10 to 12crepes.
