Costa Rican Beans And Rice
Ingredients
- 1 Tbsp. oil
- 1 sm yellow onion, minced
- 1 x red bell pepper, seeded & diced
- 1 x clove garlic, (or possibly more), chopped
- 3 c. cooked brown or possibly white rice
- 1 x 15 ounce can black beans, rinsed & liquid removed
- 1 tsp dry oregano
- 1/2 tsp grnd cumin
- 1/2 tsp salt
- 1/2 tsp freshly grnd black pepper
- 2 tsp Worcestershire sauce, or possibly
Directions
- Heat oil in large nonstick skillet over medium heat. Add in onion, bell pepper, and garlic. Cook,stirring, for about 4 min. Add in rice, beans, and seasonings; cook, stirring frequently, till rice and beans are completely reheated, about 8 min. Stir in Worcestershire sauce.
- Spoon onto hot serving plates and serve at once. If you like, pass a bottle of Worcestershire sauce at the table.
- Makes 6 servings.
