CORNBREAD GOLDEN MUFFINS
USING SIFTED COCONUT FLOUR AND YELLOW CORNMEAL. BAKE AT 450 DEGREES FOR 15 TO 20 MINUTES. Ingredients
- 4 LARGE EGGS
- 2 1/2 CUPS ORGANIC MILK
- 1/4 CUP ORGANIC WARM COCONUT OR OLIVE OIL
- 1 CUP ORGANIC YELLOW CORN MEAL
- 1 CUP ORGANIC GLUTEN FREE COCONUT FLOUR, SIFTED
- 1/4 & 1/8TH CUP ORGANIC STEVIA OR SUGAR
- 3 TEASPOONS BAKING POWDER
- 1 TEASPOON ZANTHAN GUM
- 1/2 TEASPOON IODIZED SEA SALT
Directions
- COAT MUFFIN TIN WITH NON-STICK COOKING SPRAY.
- BEAT EGGS IN MEDIUM BOWL.
- STIR IN MILK, COCONUT OIL, CORN MEAL, SIFTED
- COCONUT FLOUR, STEVIA, BAKING POWDER, ZANTHAN GUM AND SALT.
- BATTER SHOULD BE CREAMY AND POURABLE, IF TOO THICK, ADD 1 - 2 TABLESPOONS MILK.
- PLACE PAN IN OVEN FOR 7 TO 8 MINUTES UNTIL HOT!
- FILL CUPS 2/3RD FULL.
- BAKE 450 DEGREES FOR 15 TO 20 MINUTES OR UNTIL GOLDEN BROWN.
- MAKES 12 MUFFINS.
