Corn Soup
Easy corn soup with hominy. Ingredients
- 1 tbs butter
- 1 medium onion, chopped fine
- 1 cup corn (fresh or frozen)
- 1 14 oz. can hominy (golden, drained)
- 2 tomatoes, chopped
- 2 cups chicken broth
- fresh ground pepper
- 1 oz. bacon, chopped
- parsley to garnish
Directions
- Melt butter in heavy pan over medium heat. Add onion and cook till almost soft. Add bacon and cook till onions are soft.
- Stir in hominy, corn, tomatoes, broth and pepper. Cover and cook for about 30 minutes over low heat.
- Serve in bowls with fresh chopped parsley on top.
