    • 12 ea Yellow Corn (cut off cob)
    • 4 cup A.P. Flour
    • 1 tsp Baking Powder
    • 2 tsp Ground Cumin
    • 4 ea Whole Eggs
    • 4 tsp Lemon Juice
    • 2 cups Water
    • 2 bunch Green Onions
    • 1 bunch Cilantro


    1. 1. Mix all dry ingredients together
    2. 2. Mix Eggs, Lemon Juice, Water
    3. 3. Mix Corn, Green Onions, Cilantro
    4. 4. Mix dry ingredients with wet
    5. 5. Mix in Corn mix.
    6. 6. Cook in medium hot skillet with oil

      These are easy to make and absolutely delicious! They are incredibly fresh tasting and flavorful! The kids liked them as much as the adults. We served them as a passed Hors d'oeurve, Would have worked well as a plated dish too. We added kosher salt and fresh ground pepper while frying in light oil. I would recommend that.

          Everyone at the party ate these like chips. Kids too - we loved them. Luckily, there were enough left over for me to steal on my way out. I froze them and ate them all week - (microwaved). Oh My Gosh I love these!!!

                  I watched an easy way to catch the kernels of corn. Use bunting pan, place the cob on the center peak. Scrape the kernels & they fall into the bunting pan for less mess.
