    Corn Cilantro Rice

    This rice dish is a little sweet from the corn and a little tangy from the cilantro. It goes great with your favorite tacos or even something like tuna burgers.

    Ingredients

    • 1 tablespoon butter
    • 1 (12 ounce) can corn (reserve juice!)
    • 1 cup rice
    • 1/2 teaspoon chili powder
    • 1 cup water
    • 1 cup chopped cilantro
    • 1 tablespoon butter
    • 1/2 teaspoon salt

    Directions

    1. Melt butter in saucepan over low/medium heat. Add corn, rice and chili powder. Cook and stir for about 4 minutes.
    2. Add the reserved corn juice to a 1 cup measuring cup and add enough water to bring it to 1 cup. Add the corn juice/water mix and the other cup of water to the rice.
    3. Bring to a boil then turn heat to low, cover and simmer for 15 minutes or until all water is absorbed.
    4. Add butter, cilantro and salt, stir until combined.
