Corn Bread Pie
Ingredients
- 1 lb Grnd beef
- 1 lrg Minced onion
- 1 can Tomato soup
- 2 c. Water
- 1 tsp Salt, 3/4 teaspoon pepper
- 1 Tbsp. Chili pwdr, opt.
- 1/2 c. Minced green pepper
- 1 can Whole kernel corn liquid removed
- 1 box , (8 Ounce.) corn bread mix
Directions
- Brown the beef and onion in a skillet. Add in the soup, water, seasonings, corn and green pepper. Mix well and allow to simmer for 15 min. Grease a casserole dish and fill with mix about 3/4 full, leaving room for the corn bread topping. Make the corn bread according to directions, and pour over top of the mix.
- Do not be surprised when the topping disappears it will rise during the baking and form a good layer of corn bread. Bake at 400 degrees for about 20 min.
