Corn And Sour Cream With Bacon
Ingredients
- 1/2 lb Bacon
- 2 Tbsp. Bacon drippings or possibly butter
- 2 Tbsp. Chopped onion
- 2 Tbsp. Flour
- 1 tsp Salt Pepper to taste
- 1 c. Lowfat sour cream
- 2 can (12-ounce) whole kernel corn, well liquid removed
- 1 tsp Minced parsley
Directions
- Brown bacon till crisp. Reserve 2 Tbsp. drippings. Drain and crumble bacon. Cook onion in drippings till soft. Blend in flour, salt and pepper. Add in lowfat sour cream very slowly. Stir constantly to keep smooth. Heat to boiling. Add in corn and heat. Just before serving, add in half the crumbled bacon. Place in serving dish and sprinkle remaining bacon on top. Garnish with parsley.
- Yield: 6 to 8 servings.
