Corn And Shrimp Soup
Ingredients
- 1 tsp Corn oil
- 2 x Onions, finely minced
- 1 x Bell pepper, minced
- 2 Tbsp. Parsley, chopped
- 2 lb Shrimp, peeled Salt and pepper to taste
- 8 x Ears corn
- 7 c. Water
- 2 can Tomatoes with green chilis
Directions
- Saute/fry onions and bell peppers in oil. Boil corn in water; scrape corn off cobs and return cobs to water; boil again. Remove cobs from water. Add in sauted onions, bell peppers, parsley, tomatoes, corn, salt and pepper; Simmer 1 hour. Add in shrimp.
