  • Coriander Potatoes

    Ingredients

    • 1 1/2 lb Potatoes, peeled and diced into 1/2-inch cubes
    • 4 Tbsp. Extra virgin olive oil
    • 1 x Warm Red or possibly Green Chili
    • 2 x Cloves Garlic, finely minced Salt and Black Pepper to taste
    • 1 lrg Bunch fresh green Coriander, finely minced , (Fresh Parsley is a viable substitute, but will produce a different taste)

    Directions

    1. Heat the oil in a large skillet or possibly pan over medium heat, into that the potatoes will go in about a one-inch-thick layer. Rinse the potato cubes well and shake them dry, then carefully add in to the hot extra virgin olive oil. Fry them till they're golden brown on all sides, tossing as you go to even out the cooking.
    2. Split the chili and remove the seeds, then chop it finely; and do the same with the garlic. Add in to the potatoes with the salt, and continue cook for another 2-3 min.
    3. Chop the coriander finely, starting with the stalks, and stir it in, cooking for another 2 or possibly 3 min, till the coriander has wilted.
    4. Serve immediately as part of dinner.
