  • Coq Au Vin (Chicken Braised In Red Wine)

    Ingredients

    • 1 x chicken -- cut 9 pcs
    • 2 Tbsp. unsalted butter
    • 10 ounce pearl onions -- peeled
    • 4 slc bacon -- cut 1" pcs
    • 1 Tbsp. all-purpose flour
    • 3/4 c. chicken stock
    • 1 x bouquet garni (parsley, thyme, bay leaf) garlic optional
    • 2 c. red wine salt and pepper
    • 1 Tbsp. red wine vinegar

    Directions

    1. Brown the chicken in the butter in a frying pan over moderate heat.
    2. Place chicken in a heavy casserole. Brown the onions and bacon in the frying pan and add in to the chicken. Remove all but 2 Tablespoons fat from the pan.
    3. Add in the flour and stir well. Add in stock, bouquet garni, wine, salt and pepper. Stir and pour over the chicken. Cover and simmer 30 min.
    4. Add in the red wine vinegar. Degrease the sauce before serving.
