  • Copycat - Cracker Barrel Cider Pork Roast with Apples

    A few years ago, Cracker Barrel had a seasonal dish in the fall. It was a tender pork roast with apples. I've altered the recipe I found to my taste.

    Ingredients

    • 5 crisp sweet-tart apples, cut in large chunks
    • 1 large sweet yellow onion, cut into 8 wedges
    • 1 cup pressed apple cider (I use Simply Apple)
    • 2 Tbsp Olive Oil
    • Salt and Pepper
    • 2 Tbsp Rubbed Sage
    • 1 5-lb Boston Butt Roast
    • Garlic Powder (optional)

    Directions

    1. Season all sides of roast with salt and pepper. I often will add Garlic Powder, too.
    2. Heat olive oil in large, heavy skillet and brown the roast on all sides(about 15 minutes).
    3. Put roast on top of onions. Sprinkle sage over the roast and top with apples.
    4. Cook on low 5-8 hours, depending on how much you want the roast to shred. I like it for 5 hours if serving in chunks. I will cook for 8 hours if I want pulled pork. It will fall apart!
