  • Copeland's Of New Orleans' Pasta Primavera

    Ingredients

    • 5 piece broccoli
    • 4 ounce purple onion
    • 4 ounce sliced mushrooms
    • 1 tsp processed garlic
    • 1/4 tsp salt
    • 1/4 tsp crushed red pepper
    • 2 ounce crawfish tails
    • 12 x shrimp
    • 3 ounce extra virgin olive oil
    • 2 Tbsp. grated Parmesan cheese
    • 4 ounce diced tomatoes
    • 10 ounce fettucine pasta
    • 1/4 tsp crushed basil
    • 2 ounce extra virgin olive oil

    Directions

    1. Saute/fry crawfish tails and shrimp. Cook for 1 minute. Add in vegetables and spices. Stir to make sure shrimp and crawfish don't stick. Add in tomatoes and Parmesan cheese.
    2. Add in precooked fettucine pasta to hot water. Drain.
    3. Add in liquid removed pasta to saucepan and stir. Pour on plate and sprinkle with additional Parmesan cheese.
    4. This recipe yields 4 servings.
