Copeland's Of New Orleans' Pasta Primavera
Ingredients
- 5 piece broccoli
- 4 ounce purple onion
- 4 ounce sliced mushrooms
- 1 tsp processed garlic
- 1/4 tsp salt
- 1/4 tsp crushed red pepper
- 2 ounce crawfish tails
- 12 x shrimp
- 3 ounce extra virgin olive oil
- 2 Tbsp. grated Parmesan cheese
- 4 ounce diced tomatoes
- 10 ounce fettucine pasta
- 1/4 tsp crushed basil
- 2 ounce extra virgin olive oil
Directions
- Saute/fry crawfish tails and shrimp. Cook for 1 minute. Add in vegetables and spices. Stir to make sure shrimp and crawfish don't stick. Add in tomatoes and Parmesan cheese.
- Add in precooked fettucine pasta to hot water. Drain.
- Add in liquid removed pasta to saucepan and stir. Pour on plate and sprinkle with additional Parmesan cheese.
- This recipe yields 4 servings.
