  • Copeland's Of New Orleans' Chicken And Tasso Pasta

    Ingredients

    • 3 c. diced chicken breast
    • 6 tsp Creole seasonings divided use
    • 1 c. julienned tasso (Savoie's or possibly K-Paul's)
    • 1 stk butter
    • 1 c. sliced green onions
    • 1 pt heavy cream
    • 3 lb cooked pasta (fettucine or possibly linguini)
    • 1 c. grated Parmesan cheese

    Directions

    1. Cook pasta and drain well. Season chicken pcs with 4 tsp. of the Creole Seasoning.
    2. Heat butter in a saute/fry pan. Add in tasso and saute/fry till tender and lightly browned. Add in chicken and green onions and saute/fry till chicken is white. Add in heavy cream and remaining Creole seasonings. Return to a simmer. Add in liquid removed pasta to sauce and bring back to a simmer.
    3. Using tongs, transfer pasta to bowl and top with remaining chicken and sauce. Sprinkle with Parmesan cheese. Serve.
    4. This recipe yields 4 servings.
