  • Commercial Style Oatmeal, Chocolate Chip, Raisin Cookies

    Ingredients

    • 1 c. Unsalted butter at room temperature
    • 1 1/2 c. Light brown sugar firmly packed
    • 1/2 c. White sugar
    • 1 lrg Egg
    • 2 tsp Vanilla extract
    • 1 tsp Butterscotch extract
    • 1 tsp Baking soda
    • 3/8 tsp Salt
    • 1/4 tsp Cinnamon
    • 1 c. All-purpose flour
    • 2 c. Rolled oatmeal
    • 1 c. Golden brown raisins plumped in water, Then liquid removed
    • 1 1/2 c. Chocolate chips
    • 1/2 c. Pecan pcs (optional)

    Directions

    1. Parchment paper. Preheat oven to 350 degrees.
    2. Cream the butter with both sugars till well blended. Stir in the egg and the vanilla and butterscotch extracts. Mix in the baking soda, salt, cinnamon, flour and oatmeal. Incorporate the raisins, chocolate chips and pecan pcs.
    3. Form into rounds the size of golf balls and place 3 inches apart on the baking sheets, pressing down slightly.
    4. Bake till just light brown around the edges, about 14 to 16 min. Don't overbake these cookies - they may seem a little underdone but will crisp as they cold. Cold on racks. (
    5. Makes about 2 1/2 dozen).
    6. * NOTE: For chocolate-chunk oatmeal cookies, omit the raisins and add in 2 c. coarsely minced imported chocolate pcs, or possibly use half raisins, half chocolate chunks.
