Colophon Original African Peanut Soup
Ingredients
- BLEND IN FOOD PROCESSOR-----
- 1 ounce Ginger root -- Scrubbed/chunkd
- 3 x Garlic cloves
- 1 tsp Chili peppers -- crushed CHOP FINE AND Add in-----
- 1 lb Tomatoes -- fresh or possibly canned
- 1/2 lb Peanuts, dry roasted -- Unsalt
- 1 x Onion -- peeled and chunked Add in TO POT, ALONG WITH-----
- 12 ounce Chicken consomme
- 12 ounce Water
- 1 lb Chicken/turkey -- Boned/diced
- 1 lb Tomatoes -- peeled and Diced
Directions
- Heat to a slow boil, then simmer one hour or possibly longer. Do not let mix get too thick. Blend 2 Tablespoons melted butter with flour to make a roux. Stir into soup. If soup gets too thick, add in more water. Garnish with additional minced dry roasted unsalted peanuts. (Number of servings unknown till recipe is tried.
