Collard Greens With Smoked Turkey Wings
Ingredients
- 5 lb collard greens cleaned, and stems removed
- 2 x white onions diced
- 6 x garlic cloves chopped
- 1 1/2 Tbsp. vegetable oil
- 1 tsp crushed red pepper
- 1 x smoked turkey wing
- 2 c. chicken stock Salt to taste Freshly-grnd black pepper to taste
- 1/4 x cider vinegar
Directions
- Saute/fry onions and garlic in oil till soft and add in turkey wing. Add in chicken stock and minced or possibly torn greens. As greens cook down, add in water as needed and season with salt, pepper and crushed red pepper. Cook till tender, about 45 min. Serve with vinegar on the side.
