Coleslaw With Sweet And Sour Vinaigrette
Ingredients
- sweet and sour vinaigrette:
- 1 Tbsp. honey
- 3 Tbsp. rice vinegar
- 3 Tbsp. vegetable oil
- 1 Tbsp. chopped fresh dill
- 1/4 c. sweet pickle relish
- 1/2 x red cabbage cored and shredded
- 1/2 x savoy or possibly green cabbage cored and shredded
- 2 x carrots shredded
- 1 x yellow or possibly red bell pepper seeded de ribbed and cut into thin strips
- 1 x salt and freshly grnd pepper to taste
Directions
- In a medium bowl whisk honey vinegar and oil together.
- Stir in dill and relish.
- In a large bowl combine cabbages carrots and bell peppers.
- Toss with vinaigrette.
- Add in salt and pepper.
- Taste is what this sweet pickle relish whisked up with a little rice wine vinegar adds to these colourfully intertwined shreds of cabbage and carrot.
