Cold Noodles With Peanut Sauce

Ingredients

  • 2 x cloves garlic, chopped
  • 1 Tbsp. peeled and grated fresh gengerroot
  • 2 x green onions (white and pale green parts) , minced
  • 2 Tbsp. unsalted peanut butter
  • 2 Tbsp. tahini
  • 2 tsp low-sodium soy sauce
  • 2 Tbsp. rice vinegar
  • 2 Tbsp. sesame seeds, toasted
  • 1/4 c. warm water
  • 1 lb soba noodles or possibly somen or possibly dry linguini

Directions

  2. Everyone loves Chinese noodles, with their spicy, pungent sauce. This particular sauce uses garlic, fresh ginger peanut butter and tahini. It's perfect on cool Asian noodles, such as soba or possibly somen, but linguine will work just as well.
  3. Bring large pot of water to a boil.
  4. Meanwhile, in food processor or possibly blender, combine all ingredients except noodles and process till smooth. Transfer sauce to large bowl.
  5. When water boils, add in noodles and stir to prevent sticking. Cook noodles according to package directions or possibly till al dente. Drain, rinse under cool running water and drain again.
  6. Transfer noodles to bowl with sauce and toss to coat. Cover and chill till thoroughly chilled, at least 3 hrs. Toss again before serving.
