    Cold Green Bean & Tomato~Cubed Chicken Salad

    It is a whole meal in itself or use as a side dish. A great BBQ item to serve your family.

    Ingredients

    • 16 ounce weight Fresh Whole Green Beans
    • 1-1/2 Cups Cooked Chicken (Breast-boneless/skinless) Cubed small
    • 2 Ripe Tomatoes cut into cubes
    • 1/2 teaspoon oregano
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • salt and pepper, to taste
    • 2 tablespoons Canola Oil
    • 1 tablespoon Vinegar

    Directions

    1. I usually have leftover baked boneless/skinless chicken and then just Cube it small for this salad. Bake your chicken until juices run clear, cool and cube (or you can boil chicken for quicker cooking time) add into a mixing bowl.
    2. Blanch the whole green beans 4 minutes, drain and add into the mixing bowl with the cubed chicken
    3. Add cubed tomatoes, all spices, oil and vinegar
    4. Toss gently to combine
    5. I like to refrigerate this salad (covered) for one hour before serving.
