  • Cold Chinese Style Noodles With Shrimp

    Ingredients

    • 1 lb medium or possibly large shrimp shelled, cleaned
    • 2 tsp dark sesame oil
    • 2 Tbsp. low sodium soy sauce
    • 3 Tbsp. rice wine vinegar
    • 1 Tbsp. grated fresh ginger
    • 1/8 tsp sugar substitute
    • 1/8 tsp garlic pwdr
    • 1/8 tsp dry red pepper flakes
    • 8 ounce capellini or possibly angel hair pasta
    • 1 lb English cucumber halved lengthwise, and sliced very thin
    • 2 x scallions, white part only sliced very thin
    • 3 Tbsp. minced cilantro
    • 1 Tbsp. toasted sesame seeds

    Directions

    1. If your market won't steam your shrimp, place them in simmering water till they turn pink. Drain, cold and shell and clean. Chill till ready to use.
    2. In a small bowl combine the oil, soy sauce, vinegar, ginger, sugar substitute, garlic pwdr, and red pepper flakes. Set aside.
    3. Cook the pasta as per package directions till al dente. Drain under cool water and place in a large bowl.
    4. Toss the noodles with shrimp, cucumber and dressing. Add in the scallions and cilantro. Garnish with sesame seeds and serve.
    5. This recipe yields 4 servings.
