  • Coffee Can Date-nut Bread

    Ingredients

    • 1 cup chopped dates
    • 2 cups boiling water
    • 2 tsp baking soda
    • 1 cup sugar
    • 2 large eggs, beaten
    • 2 tbsp butter, melted
    • 1 tsp vanillla extract
    • 4 cups all purpose flour
    • 1 tsp salt
    • 3/4 cups pecans or waltnuts toasted and roughly chopped

    Directions

    1. preheat oven to 350
    2. butter and flour four clean 12 ounce coffee cans
    3. mix the dates, boiling water and baking soda in a bowl. set aside to cool slightly
    4. mix together the sugar and eggs in a large bowl then add the butter and vanilla and beat well. sift the flour and salt together and add to the mixture, stirring just to combine. Gently mix in the dates and nuts with their liquid until just comnbined
    5. Distribute the batter among the cans, filling them about halfway. Bake for about 1 hour or until a skewer inserted in the center comes out clean. Let cool on a rack. Remove from the cans wrap in plastic wrap
    6. makes 4 loaves
