I have a confession to make.
I really like my Crock Pot. Yes it's true. It does a great job on slow braises like this. Now that that's out there, I'll raise my head up high and tell you how to make this.
The bacon, mushrooms and coffee give this a real depth of flavor. You don't really get a coffee taste as much as you get a richness of flavor. It's something that you would definitely miss if it wasn't in there. Adding the sour cream at he end pulls all the flavors together, and just begs to be served over the top of something starchy. I happened to serve it with a Basmati Rice Pilaf, but potatoes or noodles would have been great too.

Ingredients

  • 3 lbs beef chuck roast
  • 2 onions thick sliced
  • 3 slices bacon cut into ½ inch pieces
  • 2 cups strong black coffee
  • 2 cups stock (beef or chicken)
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 tsp thyme
  • 4 oz thinly sliced mushrooms
  • 2 tbsp butter
  • 3 tbsp flour
  • ½ cup sour cream

Directions

  1. In a dutch oven or slow cooker on high heat fry bacon until slightly crisp and some fat renders out. Add chuck roast and brown on all sides, about 4 min per side . When on the final side add onions and mushrooms: saute until they start to soften, about 4 minutes more. Add coffee, stock, salt, pepper, and thyme. Cover and reduce heat to low and braise for 3-4 hours. (Do this the night before, and put it in your slow cooker during the day)
