Coconut Shrimp With Sweet Dipping Sauce
Ingredients
- 1 lb medium shrimp
- 1 c. all-purpose flour, divided
- 1/3 c. beer
- 1/4 tsp baking pwdr
- 1/4 tsp paprika
- 1/4 tsp curry pwdr
- 1/8 tsp salt
- 1/8 tsp grnd red pepper
- 8 ounce flaked coconut Vegetable oil
Directions
- Peel and devein shrimp leaving tails intact. Combine 3/4 c. flour, beer and next 5 ingredients stirring till smooth. Dredge shrimp in remaining 1/4 c. flour; dip inbatter, and coat with coconut. Fry shrimp in warm 350 degree oil till coconut is golden brown, turning once. Serve with Sweet Dipping Sauce.
- Sweet Dipping Sauce -10 ounces orange marmalade3 Tbsp. prepared horseradish3 Tbsp. creole mustard
- (Combine all ingredients to yield 1 1/4 c. sauce)
