    Coconut Oil Baking Powder Biscuits

    I was a little skeptical about switching to coconut oil but I will never go back now. They have a light hint of Coconut but it's not very strong but they smell like coconut. No matter how quick you whip these together.No more having extra cold Butter! They come out LIght and Fluffy every time. You can see every Flaky Layer. We've been staying at my mother in laws recently and she has requested them 4 nights in a row,

    Ingredients

    • 3 Cups Flour- I use a mix of 2 cups white/ 1 cup multi grain with flax
    • 1 TSP Pink Salt
    • 3/4 Cup Coconut Oil- Room Temp
    • 1/2 TBSP Baking Powder
    • 1 Cup Milk or Water or Beet Puree!

    Directions

    1. Preheat oven to 450 degrees.
    2. Combine everything but the milk/Water in a bowl. Mix until crumbly. Oil Doesn't need to be in Pea Size. It can be mixed til it looks like Corn Meal!
    3. Add The milk, Stir until ball forms.
    4. Lightly flour counter and put ball onto Counter. Knead lightly for 1 minute or more.
    5. I personally pat flat and form into a rectangle but you can roll it out til it's about 1 inch Thick.
    6. Using a Sharp knife or cookie cutter, Cut into shapes of choice. I cut mine into squares, no Rerolling and all eveningly cut.
    7. Place onto a cookie sheet.
    8. Bake 15 minutes or til golden Brown,
    9. Enjoy.
