Coconut Lime Balsamic Vinaigrette

The Olive Press (http:/theolivepress.com) in Sonoma/Napa has some great olive oils and vinegars. This is a dressing I made with Coconut Balsamic vinegar and Lime Olive Oil. Fred and Nancy Cline own the Olive Press. They also own Cline Vineyards and Jacuzzi Family Vineyards. We are wine club members at both wineries so we get a nice discount on products from the Olive Press as well.

Ingredients

  • 1/8 cup Coconut Balsamic Vinegar
  • 1/2 cup Lime Olive Oil
  • 1/2 lime, zested and juiced
  • salt to taste
  • Colorado Plateau Citrus Pepper to taste (http://www.savoryspiceshop.com)

Directions

  1. Whisk all ingredient together to emulsify.
