  • Coconut Fish

    A quick prep for almost any fish

    Ingredients

    • 2 lbs firm white fish fillets (4-6 fillets depending on the fish used)
    • 1 can coconut milk (not the low fat light stuff)
    • 2 white onions, peeled and sliced into rings.
    • 2 tbs Mrs Dash Chipotle Seasoning.
    • 1 tbs siraccha sauce. (Chili Garlic Sauce can be substituted)
    • 1 tbs minced garlic.

    Directions

    1. Pre-heat your oven to 350 degrees.
    2. In a mixing bowl stir together the coconut milk, garlic, seasoning and sauce until well blended.
    3. Season both sides of the fish with salt and pepper.
    4. Place the fish filets in a large baking dish.
    5. Layer the sliced onion rings over the fish.
    6. Pour the coconut sauce over the fish and onions.
    7. Bake for 20-25 minutes until the fish flakes easily.
    8. Best served with rice or potatos.
