Coconut Cool Whip Pudding Pie

- 2 - 3.4 oz. boxes instant coconut cream pudding, or vanilla
- 2 cups cold milk *
- 1 cup Cool Whip (use the rest for the topping)
- 9" graham cracker crust - see links for homemade
- 1/2 cup toasted coconut
- If using large box of pudding (5.9 oz.), cut milk to 1 3/4 cups.
Directions
- Pre-bake the pie crust with 1/4 cup of the coconut added.
- Mix the pudding with cold milk for 2 minutes with a whisk.
- Fold in 1 cup Cool Whip.
- Pour into the pie crust.
- Refrigerate several hours.
- Top with the rest of the Cool Whip and the coconut.
- Keep refrigerated.
