    Coconut chia seeds pudding is always the best option for my breakfast when I do not have much time to cook. You can prepare seeds a day before, and quickly make your breakfast in the morning.

    Ingredients

    • 8 tablespoons of Chia seeds
    • 2 cups of Coconut milk drink
    • 1/3 cup of Coconut yogurt
    • 1 tablespoon of Agave syrup
    • 1 teaspoons of Vanilla
    • 1/2 teaspoon of Cinnamon
    • pinch of Salt
    • 1/2 Mango
    • 2 tablespoons Coconut shavings

    Directions

    1. Pour chia seeds into a coconut milk drink(not that thick one from a can but coconut drink), cover the bowl with a towel and leave it in the fridge overnight. The shortest time for seeds to stay put is about 2 hours.
    2. Mix seeds, add vanilla, salt, cinnamon and mix it again. To make it sweeter add a little bit of agave syrup.
    3. Put coconut shavings in a frying pan and cook it a little bit. Mix a yogurt with agaves syrup, then cut a mango into cubes.
    4. Place chia pudding in a glass, put some fried coconut shavings. Add chopped mango, yogurt and all the remaining coconut shavings on the top.
    5. Enjoy!
