    In South Africa we get a biscuit called Tennis Biscuits. These coconut biscuits are often used as the base for tarts or cheese cakes. Here I have made a version using coconut sugar and honey. Head straight on to the Recipe For ♥ Coconut Biscuits ♥ When we were children, our next door neighbour had a police trained dog. He never bothered me and got used to us hopping the wall. One day a friend and I went to visit and walked in through the front gate. While we were knocking on the door he came up to us. And she cowered in fear. In retrospect this was quite odd as they had the meanest Staffordshire Terrier you can imagine. The dog must have smelt her fear and jumped up and bit her. Thankfully she turned her head as he did so otherwise it could have been a lot worse than it was. The lesson I learnt from that was to not show fear or scream near a dog. Last night while I was preparing dinner Scarlett started barking. I looked out of the window and saw a woman walking her dog. Our neighbour’s Rottweiler had jumped the wall, and she was cowering over her dog screaming her head off. I ran up to the gate but could not go out as Scarlett was now very agitated. I watched the Rottweiler calmly chase the other neighbour’s cat and asked her to stop screaming. This was for two reasons. One to keep the dogs calm, and the other was so that I could call for our neighbour. He came out with his son, corralled the dog who is still a puppy and got him back in their yard. After checking that the woman was OK, he came to speak to us. He is now going to have to raise his wall as the dog has learnt he can get over. Click on the links for conversions and notes. Print Recipe 0 from 0 votes Coconut Biscuits Commonly known as tennis biscuits, you can make these in any shape you want Recipe Category: Baking Servings: 20 biscuits All Rights Reserved: An original recipe from Lavender and Lime Ingredients220 g flour, plus extra for dusting85 g coconut sugar30 g desiccated coconut5 mls baking powder5 mls bicarbonate of soda1 egg, lightly beaten90 g salted butter, melted and slightly cooled30 g honey MethodPlace the flour, coconut sugar, desiccated coconut, baking powder and bicarbonate of soda into a stand mixer bowlGive a quick mix with the paddle beater attachmentPlace the egg, butter and honey into a mixing bowl and whisk to combineStart your stand mixer on a low speed and slowly pour the wet ingredients into the bowlAs soon as the dough form, stop the machine and tip the dough onto cling filmShape into a disc, cover completely with the cling film and place into the fridge for 30 minutesLightly dust a silpat or piece of baking paper with flour, then roll the dough out with the cling film laid on top of the dough, until 5mm thickCut 6cm rounds or 7cm squares using up all the dough, and place the biscuits onto a lined baking tray, allowing for spreadingPlace the baking tray into the fridge while you preheat the oven to 180° CelsiusPrick the edges of each biscuit with a skewer then place the baking tray into the oven for 18 minutesRemove from the oven and leave to cool on the baking tray for 5 minutes before transferring the biscuits to a wire rack to cool completely Inspiration published on Lavender and Lime March 5: 2018: Crayfish Balti 2017: Pirate 2015: Banana Bread 2014: Grace And Gratitude 2013: Venison Roast With A Coffee And Star Anise Rub 2012: Shellfish Bar Live simply.
