Ingredients

  • 2 Chicken Breasts
  • 150g Sweet Peas
  • 1 Orange
  • 1 tbsp Ginkgo Nuts
  • ¼ Red Bell Peppers aka Capsicums
  • 1 tsp Minced Garlic
  • ½ tsp Minced Ginger
  • ½ Small Onion
  • 1 tsp Oyster Sauce
  • 1 tsp Chinese Cooking Wine
  • 2 tsp Sesame Oil
  • 2 tbsp Olive Oil
  • Marinade for Chicken:
  • ½ Egg-white
  • 1 tsp Oyster Sauce
  • 1 tsp Minced Ginger
  • Pinch of Salt
  • Dash of Fish Sauce

Directions

  1. Rinse chicken and dice into cubes, and marinate for about an hour.
  2. Clean vegetables and cut into small pieces.
  3. Remove " veins " from the peas and rinse thoroughly.
  4. Cut orange into slices and place onto serving plate neatly.
  5. Heat 1 tbsp of oil and stir fry ginger with sweet peas till the veggies turn bright green. Transfer to plate with orange slices.
  6. Heat another tbsp of oil and sautéed garlic and onion till fragrant.
  7. Add chicken, capsicums, ginkgo nuts, sesame oil and oyster sauce. Mix well and stir fry for about 4 - 5 minutes, adding wine last. Do not cook chicken for too long or they will turn tough.
  8. Dish out your chicken onto the serving plate and serve your succulent Fortune Stir-fry Chicken with Ginkgo Nuts!
