    Classic Oatmeal Raisin Cookies

    I’ve tried many recipes of oatmeal raisin cookies but settled on this as the best one yet. It’s from Joy of Cooking (1997). The cookies are nubby-textured, and somewhat soft, with a mild brown sugar and oats flavor.

    Ingredients

    • 1 3/4 cups all purpose flour
    • 3/4 teaspoon baking soda
    • 3/4 teaspoon baking powder
    • 1/3 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 pound butter (2 sticks), softened
    • 1 1/2 cups brown sugar
    • 1/4 cup granulated sugar
    • 2 eggs
    • 2 1/2 teaspoons vanilla extract
    • 1 cup raisins (or use 1/2 c. raisins + 1/2 cup chocolate chips)
    • 3 1/2 cups oatmeal

    Directions

    1. Position rack in the upper third of oven, then preheat to 350 degrees F. Line baking sheets with parchment paper.
    2. In small mixing bowl stir together the flour, baking soda, baking powder, salt, cinnamon and nutmeg; set aside.
    3. In large mixing bowl beat the butter, brown and white sugars, eggs and vanilla together until well blended.
    4. Stir the flour mixture into butter mixture until smooth; stir in raisins and oatmeal.
    5. Drop dough by heaping tablespoons about 3-inches apart onto prepared baking sheets. With dampened hands (to prevent sticking) lightly press each cookie mound down to thin it down somewhat.
    6. Bake until cookies are lightly browned all over and almost firm when touched in center of top, about 9-11 minutes. Remove sheet from oven and place on a rack. Allow cookies to firm slightly, about 3 minutes, then transfer cookies to rack and cool to room temperature.
