Classic Oatmeal Raisin Cookies
Prep: 20 min Cook: 8 min Servings: 42by Frosted Flaker7 recipes>I’ve tried many recipes of oatmeal raisin cookies but settled on this as the best one yet. It’s from Joy of Cooking (1997). The cookies are nubby-textured, and somewhat soft, with a mild brown sugar and oats flavor. Ingredients
- 1 3/4 cups all purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/3 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 pound butter (2 sticks), softened
- 1 1/2 cups brown sugar
- 1/4 cup granulated sugar
- 2 eggs
- 2 1/2 teaspoons vanilla extract
- 1 cup raisins (or use 1/2 c. raisins + 1/2 cup chocolate chips)
- 3 1/2 cups oatmeal
Directions
- Position rack in the upper third of oven, then preheat to 350 degrees F. Line baking sheets with parchment paper.
- In small mixing bowl stir together the flour, baking soda, baking powder, salt, cinnamon and nutmeg; set aside.
- In large mixing bowl beat the butter, brown and white sugars, eggs and vanilla together until well blended.
- Stir the flour mixture into butter mixture until smooth; stir in raisins and oatmeal.
- Drop dough by heaping tablespoons about 3-inches apart onto prepared baking sheets. With dampened hands (to prevent sticking) lightly press each cookie mound down to thin it down somewhat.
- Bake until cookies are lightly browned all over and almost firm when touched in center of top, about 9-11 minutes. Remove sheet from oven and place on a rack. Allow cookies to firm slightly, about 3 minutes, then transfer cookies to rack and cool to room temperature.
