Ingredients

  • Vegetable cooking spray
  • 1 Tbsp. Extra virgin olive oil
  • 1 lb Chicken white meat, pcs
  • 2 c. Rice
  • 1 med Onion, minced
  • 1 med Red bell pepper, minced
  • 1 med Green bell pepper, minced
  • 1 x Clove garlic, chopped
  • 1 1/2 tsp Salt, optional
  • 1 1/2 tsp Basil
  • 3 1/2 c. Chicken stock
  • 1 Tbsp. Lime juice
  • 1/8 tsp Grnd saffron Or possibly 1/2 tsp. turmeric
  • 1 x Bay leaf
  • 1 med Tomato, minced
  • 1 c. Frzn green peas, thawed

Directions

  1. Spray rice cooker with vegetable non-stick spray. Add in all ingredients except tomato and green peas. Stir. Cover and cook till rice cooker shuts off. Carefully remove cover. Mix in tomatoes and peas. Cover and allow to steam for 10 min.
  2. Serves 8.
