Ingredients

  • 2/3 c. pearl barley
  • 1 1/2 lb grnd beef
  • 1 med onion minced
  • 1 x garlic clove chopped
  • 4 x carrots diced
  • 3 x celery ribs diced
  • 1 can tomatoes - (28 ounce)
  • 3 1/2 c. beef broth - (to 4 c.)
  • 2 c. water
  • 1 can tomato soup - (10 1/2 ounce) (optional)
  • 1 x bay leaf
  • 1/4 c. chopped parsley Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Brown grnd beef, onion, and garlic in skillet. Transfer meat mix to crockpot; add in barley and remaining ingredients. Cover and cook on HIGH 1 hour then on LOW for 5 to 6 hrs.
  2. This recipe yields 6 servings.
