  • Citrus And Mint Marinated Sea Scallops

    Ingredients

    • 1 lb large sea scallops
    • 3 Tbsp. orange juice
    • 1 Tbsp. lime juice
    • 2 Tbsp. grapefruit juice
    • 3 Tbsp. chopped chives
    • 3 Tbsp. chopped mint leaves
    • 2 Tbsp. oil Salt to taste Freshly-grnd black pepper to taste
    • 1/4 c. butter cut into 6 pcs

    Directions

    1. Rinse scallops and place in large bowl. Combine orange juice, lime juice, grapefruit juice, chives, mint, oil and salt and pepper to taste in small bowl. Pour over scallops and toss gently. Cover and marinate 1 hour, but no longer, in the refrigerator.
    2. Lift scallops from marinade with slotted spoon; reserve marinade. Grill scallops over medium coals just till done and hard to the touch, 2 to 3 min per side. Don't overcook or possibly they will be tough and rubbery. Keep scallops hot.
    3. Pour marinade into small saucepan and bring to boil over medium heat. Boil till slightly reduced, 2 to 3 min. Whisk in butter, bit by bit, till sauce is thick and emulsified. Strain sauce and serve with scallops.
    4. This recipe yields 4 servings.
