Ingredients

  • 3 Tbsp. Granulated sugar
  • 1/2 tsp Cinnamon
  • 2 c. Unbleached flour
  • 1 1/2 Tbsp. Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 c. Granulated sugar
  • 1 tsp Cinnamon
  • 2 x Egg whites -- whipped
  • 1 3/4 c. Buttermilk* -- at room Temperature
  • 1/4 c. Applesauce -- at room Temperature
  • 2 Tbsp. Maple syrup
  • 1 tsp Vanilla
  • 1/2 tsp Orange extract
  • 1/2 c. Raisins

Directions

  1. Prepare waffle iron with cooking spray and heat up. In a small bowl, combine the 3 Tbsp. sugar and 1/2 tsp. cinnamon; set aside. In a mixing bowl, combine flour, baking pwdr, baking soda, remaining sugar and cinnamon. In another mixing bowl, combine egg whites, buttermilk, applesauce, maple syrup, vanilla, orange extract, and raisins. Mix dry ingredients with wet ingredients just till moistened. Pour sufficient batter to fill two-thirds of the waffle iron. Cook till crisp and golden.
  2. Set aside. Repeat with remaining batter. Serve waffles with warm syrup.
  3. Sprinkle sugar and cinnamon mix over waffles.
